					Step 1
			Preheat the oven to 375°F (190°C).

			Bring a large pot of salted water to a boil. Add the lobsters and cook for about 8 minutes, or until they are bright red. Remove the lobsters and let them cool slightly.

			Once cooled, split the lobsters in half lengthwise and remove the meat from the claws and tails. Chop the meat into bite-sized pieces and set aside. Reserve the shells for later.

			In a large skillet, melt the butter over medium heat. Add the chopped shallots and cook until softened.

			Pour in the white wine and fish stock. Bring to a boil and let it reduce by half.

			Stir in the double cream, Dijon mustard, and egg yolks. Cook gently, stirring constantly, until the mixture thickens.

			Add the chopped lobster meat to the sauce and season with salt and black pepper to taste. Cook for a few more minutes until the lobster is heated through.

			Spoon the lobster mixture back into the reserved lobster shells. Sprinkle the grated Gruyère cheese over the top.

			Place the stuffed lobster shells on a baking sheet and bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and golden brown.
