					Step 1
			Place beef bones in a large pot and cover with cold water. Bring to a boil and cook for 5 minutes, then drain and rinse bones.

			Char onion and ginger under a broiler until blackened, about 10 minutes.

			In a large pot, add bones, charred onion, and ginger, water, fish sauce, rock sugar, star anise, cloves, and cinnamon stick. Bring to a boil, then reduce heat and simmer for at least 3 hours.

			Strain the broth through a fine-mesh sieve and discard solids. Return the broth to the pot and keep warm.
					Step 5
			Cook rice noodles according to package instructions, then drain and rinse under cold water.
					Step 6
			Divide noodles among serving bowls. Top with beef slices. Ladle hot broth over the beef, which will cook it.
					Step 7
			Garnish with scallions, cilantro, bean sprouts, Thai basil, and lime wedges. Serve with hoisin sauce and sriracha on the side.
