					Step 1
			In a heavy saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring constantly until sugar dissolves.

			Continue cooking without stirring until the mixture reaches hard-ball stage (about 121°C on a candy thermometer).

			In a large bowl, beat egg whites until stiff peaks form.
					Step 4
			Gradually pour the hot syrup mixture in a thin stream over beaten egg whites, beating constantly on high speed until the mixture holds its shape and becomes slightly dull.
					Step 5
			Quickly mix in the vanilla extract and pecans.
					Step 6
			Drop by spoonfuls onto waxed paper. Let stand at room temperature until dry.
