  • 1 tsp cumin
  • 3 cloves garlic
  • 1 jalapeño
  • 2 tbsp olive oil
  • 1 onion
  • 500 g pinto beans
  • 2 tsp salt
  • 2 L water

Directions

Step 1
Rinse and soak the pinto beans in water overnight.
Step 2
Drain the beans and place them in a large pot. Add fresh water to cover the beans by about 5 cm.
Step 3
Add the chopped onion, garlic, and jalapeño to the pot. Bring to a boil.
Step 4
Reduce the heat and simmer for about 1.5 to 2 hours, or until the beans are tender.
Step 5
Drain the beans, reserving about 250 ml of the cooking liquid.
Step 6
In a large skillet, heat the olive oil over medium heat. Add the beans and mash them with a potato masher or fork.
Step 7
Add the reserved cooking liquid a little at a time until the beans reach your desired consistency.
Step 8
Stir in the salt and ground cumin. Cook for an additional 5 minutes, stirring occasionally.
Step 9
Serve warm and enjoy!
