					Step 1
			In a small bowl, dissolve the yeast in warm milk and let it sit for about 10 minutes until frothy.

			In a large mixing bowl, combine the flour, sugar, salt, and lemon zest.

			Make a well in the center and add the yeast mixture, eggs, vanilla extract, and softened butter.

			Mix the ingredients together until a dough forms. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.

			Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 2 hours or until it has doubled in size.

			Punch down the dough and knead in the raisins and candied fruit until evenly distributed.

			Shape the dough into a round loaf and place it in a greased panettone mold or a deep round baking dish.

			Cover it again and let it rise for another hour.

			Preheat your oven to 180°C (350°F).

			Bake the Panettone for about 40-45 minutes, or until the top is golden brown and a skewer inserted into the center comes out clean.
