Pernil is a succulent, slow-roasted pork shoulder seasoned with a flavorful blend of spices. It's a staple in many Latin American households, especially during festive occasions.

Ingredients

  • 1 tbsp black pepper
  • 8 garlic cloves
  • 1 tbsp ground cumin
  • 120 ml olive oil
  • 240 ml orange juice
  • 2 tbsp oregano
  • 4.5 kg pork shoulder
  • 1.5 tbsp salt
  • 60 ml white vinegar

Directions

Step 1
Preheat your oven to 160°C (325°F).
Step 2
Rinse the pork shoulder and pat dry with paper towels.
Step 3
Using a sharp knife, make several deep cuts into the pork shoulder.
Step 4
In a blender, combine the garlic, oregano, cumin, salt, black pepper, olive oil, vinegar, and orange juice. Blend until smooth.
Step 5
Rub the spice mixture all over the pork shoulder, making sure to get it into the cuts.
Step 6
Place the pork shoulder in a roasting pan, cover with aluminum foil, and let it marinate in the refrigerator for at least 4 hours, preferably overnight.
Step 7
Roast the pork shoulder in the preheated oven for about 6 hours, or until the meat is tender and easily pulls apart with a fork.
Step 8
Remove the foil during the last hour of cooking to allow the skin to crisp up.
Step 9
Let the pernil rest for 20 minutes before carving. Serve and enjoy!
