Ingredients

  • 500 g broccoli florets
  • 50 g butter
  • 200 g cheddar cheese
  • 750 ml chicken broth
  • 30 g flour
  • 2 garlic cloves
  • 250 ml milk
  • 1 onion
  • 1 tsp salt

Directions

Step 1
Melt the butter in a large pot over medium heat.

Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.

Stir in the flour and cook for another 2 minutes, stirring constantly.
Step 4
Gradually whisk in the chicken broth and milk until smooth.

Add the broccoli florets, salt, and black pepper. Bring to a boil, then reduce the heat and simmer until the broccoli is tender, about 15 minutes.

Puree the soup with an immersion blender until smooth, or leave it chunky if you prefer.
