					Step 1
			Rinse and drain the black beans.
					Step 2
			Turn on the Instant Pot® and select the sauté function. Add olive oil, onion, green bell pepper, and garlic. Sauté until the onion is translucent.
					Step 3
			Add the black beans, water, bay leaf, cumin, oregano, and salt to the Instant Pot®. Stir to combine.
					Step 4
			Close the lid and set the valve to the sealing position. Select the manual or pressure cook function and set the timer for 35 minutes.
					Step 5
			Once the timer goes off, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
					Step 6
			Open the lid and add the vinegar and sugar. Stir well.
					Step 7
			Serve hot as a main dish or side.
