			Preheat your oven to 220°C (425°F).

			Roll out the pastry dough on a lightly floured surface and cut into 12 rounds to fit a standard muffin tin.

			Press the dough rounds into the muffin cups.

			In a medium bowl, cream together the brown sugar, corn syrup, and unsalted butter until smooth.

			Beat in the eggs, vanilla extract, and salt until well combined.

			If using raisins, sprinkle a few into the bottom of each pastry shell.

			Pour the filling mixture into the prepared pastry shells, filling each about two-thirds full.

			Bake in the preheated oven for 12-15 minutes, or until the filling is set and the pastry is golden brown.

			Allow the tarts to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
