Ingredients

  • 1 bay leaf
  • 1500 ml beef broth
  • 450 g beef stew meat
  • 0.5 tsp black pepper
  • 2 carrots
  • 2 stalks celery
  • 1 tsp dried marjoram
  • 1 tsp dried thyme
  • 150 g frozen green beans
  • 2 cloves garlic
  • 15 ml olive oil
  • 1 onion
  • 150 g pearled barley
  • 1 tsp salt
  • 500 ml water

Directions

Step 1
In a large pot, heat the olive oil over medium heat. Add the beef stew meat and cook until browned on all sides.
Step 2
Add the chopped onion, sliced carrots, and chopped celery to the pot. Cook until the vegetables are tender, about 5-7 minutes.
Step 3
Stir in the minced garlic and cook for an additional 1 minute.
Step 4
Pour in the beef broth and water. Add the pearled barley, dried thyme, dried marjoram, salt, black pepper, and bay leaf. Bring to a boil.
Step 5
Reduce the heat to low, cover, and simmer for about 1 hour, or until the barley and beef are tender.
Step 6
Stir in the frozen green beans and cook for an additional 5-10 minutes, until the green beans are heated through.
Step 7
Remove the bay leaf before serving. Enjoy your hearty beef and barley soup!
