					Step 1
			Heat the olive oil in a large pot over medium heat.

			Add the chopped onion and minced garlic, and sauté until the onion is translucent.

			Add the sliced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 20 minutes.

			Use a hand blender to puree the soup until smooth.

			Add the chopped kale and sliced chorizo to the pot. Simmer for another 10-15 minutes, until the kale is tender.
