			Preheat your oven to 170°C (340°F).

			In a large ovenproof pot, heat olive oil over medium heat.

			Season the pork loin with salt and pepper, then brown it on all sides in the pot.

			Remove the pork and set aside. In the same pot, add sliced onion and apple, and cook until softened.

			Stir in the sauerkraut, brown sugar, and caraway seeds.

			Place the pork loin on top of the sauerkraut mixture.

			Cover the pot and transfer it to the oven. Cook for 90 minutes, or until the pork is tender.
