Savory Chicken Sotanghon is a delicious Filipino noodle soup made with tender chicken, flavorful broth, and sotanghon (glass noodles). It's a comforting dish perfect for any day of the week.

Soak the sotanghon noodles in water for 10 minutes or until they soften. Drain and set aside.

In a large pot, heat the cooking oil over medium heat. Sauté the garlic and onion until fragrant and translucent.

Add the chicken breast to the pot and cook until it turns white, about 5-7 minutes.

Pour in the chicken broth and bring it to a boil. Simmer for 15 minutes or until the chicken is tender.

Remove the chicken from the pot and shred it into bite-sized pieces. Return the shredded chicken to the pot.

Add the fish sauce, salt, and pepper to the broth. Stir well to combine.
