Ingredients

  • 0.5 teaspoons black pepper
  • 500 grams carrots
  • 200 ml coconut milk
  • 2 cloves garlic
  • 2 tablespoons ginger
  • 2 tablespoons olive oil
  • 1 onion
  • 1 teaspoon salt
  • 1000 ml vegetable broth

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and sauté until translucent, about 5 minutes.
Step 3
Add the minced garlic and grated ginger, and cook for another 2 minutes.
Step 4
Add the chopped carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the carrots are tender.
Step 5
Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
Step 6
Stir in the coconut milk, salt, and black pepper. Adjust seasoning to taste.
Step 7
Serve hot, garnished with a dollop of coconut milk or fresh herbs if desired.
