					Step 1
			Rinse the red lentils thoroughly under cold water.

			In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

			Add the chopped onion and sauté until golden brown.

			Stir in the minced garlic and grated ginger, and cook for another minute.

			Add the chopped tomatoes, turmeric powder, coriander powder, and cook until the tomatoes are soft.

			Add the rinsed lentils and water to the pot. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the lentils are tender.

			Add the fresh spinach and cook for another 5 minutes until the spinach is wilted.

			Stir in the garam masala and salt. Adjust seasoning if needed.
