  • 2 cups baby spinach
  • 0.5 teaspoon black pepper
  • 2 pieces boneless chicken breasts
  • 2 tablespoons butter
  • 2 pieces carrots
  • 2 stalks celery
  • 6 cups chicken broth
  • 3 cloves garlic
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 piece onion
  • 1 pound potato gnocchi
  • 0.5 teaspoon salt
  • 1 teaspoon thyme

Directions

Step 1
Heat the olive oil and butter in a large pot over medium heat.
Step 2
Add the diced onion, minced garlic, chopped carrots, and celery. Cook until the vegetables are tender, about 5-7 minutes.
Step 3
Add the chicken breasts to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer until the chicken is cooked through, about 15-20 minutes.
Step 4
Remove the chicken from the pot and shred it with two forks.
Step 5
Return the shredded chicken to the pot and stir in the heavy cream.
Step 6
Add the gnocchi, baby spinach, dried thyme, salt, and black pepper. Simmer for another 5-7 minutes until the gnocchi are cooked and the soup has thickened slightly.
