Step 1
Heat the olive oil and butter in a large pot over medium heat.

Add the diced onion, minced garlic, chopped carrots, and celery. Cook until the vegetables are tender, about 5-7 minutes.

Add the chicken breasts to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer until the chicken is cooked through, about 15-20 minutes.

Remove the chicken from the pot and shred it with two forks.

Return the shredded chicken to the pot and stir in the heavy cream.
