Step 1
In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cardamom.

In another bowl, mix the coconut milk, water, and egg until well combined.

Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. Knead the dough until it is smooth and elastic.

Cover the dough with a damp cloth and let it rest for about 30 minutes.

Roll out the dough on a floured surface to about 1/4 inch thickness. Cut into triangles or desired shapes.

Heat the vegetable oil in a deep fryer or large pot over medium heat.

Fry the mandazi in batches until they are golden brown, turning them occasionally to ensure even cooking.

Remove from oil and drain on paper towels. Serve warm.
