Mandazi are a popular East African snack, similar to donuts but with a slightly denser texture and a hint of coconut flavor. They are perfect for breakfast or as a tea-time treat.

Ingredients

  • 500 g all-purpose flour
  • 10 g baking powder
  • 200 ml coconut milk
  • 1 egg
  • 5 g ground cardamom
  • 1 pinch salt
  • 75 g sugar
  • 500 ml vegetable oil
  • 180 ml water

Directions

Step 1
In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cardamom.
Step 2
In another bowl, mix the coconut milk, water, and egg until well combined.
Step 3
Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. Knead the dough until it is smooth and elastic.
Step 4
Cover the dough with a damp cloth and let it rest for about 30 minutes.
Step 5
Roll out the dough on a floured surface to about 1/4 inch thickness. Cut into triangles or desired shapes.
Step 6
Heat the vegetable oil in a deep fryer or large pot over medium heat.
Step 7
Fry the mandazi in batches until they are golden brown, turning them occasionally to ensure even cooking.
Step 8
Remove from oil and drain on paper towels. Serve warm.
