Step 1
In a large pot, combine the beef shank and water. Bring to a boil.

Skim off any scum that rises to the surface. Lower the heat and add the onion and peppercorns. Simmer for about 1.5 to 2 hours or until the beef is tender.

Add the potatoes and cook until tender, about 10 minutes.

Season with fish sauce, salt, and pepper.

Add the green beans and cabbage. Cook until the vegetables are tender but not overcooked, about 5 minutes.
