Directions
Step 1
In a medium saucepan, whisk together sugar, flour, and salt.

Gradually whisk in milk and cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

Remove from heat and stir in a small amount of the hot mixture into the beaten egg yolks, then return all to the saucepan.

Cook for an additional 2 minutes, stirring constantly.

Remove from heat and stir in butter and vanilla extract until smooth.

Let the pudding cool slightly.

Arrange a layer of banana slices on the bottom of the pie crust.

Pour half of the pudding over the bananas and then repeat the layers.

Cover the pie with plastic wrap directly on the surface of the pudding to prevent a skin from forming.

Refrigerate for at least 4 hours or until set.
