Banana Pudding Pie

A delightful homemade banana pudding pie made with a creamy banana filling, layered with fresh bananas and topped with whipped cream.

  • 3 bananas
  • 30 grams butter
  • 3 egg yolks
  • 30 grams flour
  • 500 ml milk
  • 1 pie crust
  • 1 pinch salt
  • 200 grams sugar
  • 5 ml vanilla extract
  • 240 ml whipped cream

Directions

Step 1
In a medium saucepan, whisk together sugar, flour, and salt.
Step 2
Gradually whisk in milk and cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
Step 3
Remove from heat and stir in a small amount of the hot mixture into the beaten egg yolks, then return all to the saucepan.
Step 4
Cook for an additional 2 minutes, stirring constantly.
Step 5
Remove from heat and stir in butter and vanilla extract until smooth.
Step 6
Let the pudding cool slightly.
Step 7
Arrange a layer of banana slices on the bottom of the pie crust.
Step 8
Pour half of the pudding over the bananas and then repeat the layers.
Step 9
Cover the pie with plastic wrap directly on the surface of the pudding to prevent a skin from forming.
Step 10
Refrigerate for at least 4 hours or until set.
Step 11
Before serving, top with whipped cream and additional banana slices, if desired.
