  • 3 tbsp balsamic vinegar
  • 0.5 tsp black pepper
  • 1 tbsp butter
  • 2 tbsp capers
  • 0.5 cup chicken broth
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 500 g pork tenderloin
  • 1 tsp salt

Directions

Step 1
Cut the pork tenderloin into 1-inch thick medallions.
Step 2
Season the pork medallions with salt and black pepper.
Step 3
Heat the olive oil in a large skillet over medium-high heat.
Step 4
Add the pork medallions to the skillet and cook for about 3-4 minutes per side, until browned and cooked through. Remove from the skillet and set aside.

In the same skillet, add minced garlic and cook for about 30 seconds until fragrant.

Add balsamic vinegar, chicken broth, and capers to the skillet. Bring to a simmer and cook for about 2 minutes until the sauce is slightly reduced.

Stir in the butter until melted and the sauce is smooth.
Step 8
Return the pork medallions to the skillet and coat them with the sauce. Cook for another 1-2 minutes to warm through.
Step 9
Serve the pork medallions with the balsamic caper sauce over the top.
