Ingredients

6 Servings
  • 0.5 teaspoon black pepper
  • 0.5 cup cilantro
  • 4 ears corn
  • 1 jalapeno
  • 2 tablespoons lime juice
  • 1 red bell pepper
  • 0.5 red onion
  • 1 teaspoon salt
  • 1 tomato

Directions

Step 1
Preheat your grill to medium-high heat.
Step 2
Place the husked corn directly on the grill and cook, turning occasionally, until the corn is charred on all sides, about 10-15 minutes.
Step 3
Remove the corn from the grill and let it cool slightly. Once cool enough to handle, cut the kernels off the cob and place them in a large bowl.
Step 4
Add the diced red bell pepper, tomato, red onion, cilantro, and jalapeno to the bowl with the corn.
Step 5
Pour in the lime juice, then season with salt and black pepper. Stir to combine all the ingredients well.
Step 6
Let the salsa sit for at least 15 minutes to allow the flavors to meld. Serve with tortilla chips or as a topping for your favorite dishes.
