  • 2 carrots
  • 500 g chicken thighs
  • 400 ml coconut milk
  • 2 tbsp cooking oil
  • 2 tbsp curry powder
  • 2 tbsp fish sauce
  • 3 garlic cloves
  • 1 tbsp ginger
  • 1 onion
  • 0.5 tsp pepper
  • 2 potatoes
  • 1 red bell pepper
  • 1 tsp salt

Directions

Step 1
Heat the cooking oil in a large pan over medium heat.
Step 2
Add the chopped onions, minced garlic, and minced ginger. Sauté until the onions are translucent.
Step 3
Add the chicken pieces and cook until they are no longer pink.
Step 4
Stir in the curry powder and cook for another minute.
Step 5
Add the cubed potatoes, sliced carrots, and sliced red bell pepper. Stir to combine.
Step 6
Pour in the coconut milk and bring to a simmer.
Step 7
Add the fish sauce, salt, and pepper. Stir well.
Step 8
Cover and cook for about 20-25 minutes or until the vegetables are tender and the chicken is fully cooked.

Adjust the seasoning if necessary and serve hot with rice.
