			Melt the butter in a large skillet over medium heat.

			Add the sliced onions and cook until caramelized, about 25 minutes.

			Add the minced garlic and cook for another 2 minutes.

			Transfer the onion mixture to the slow cooker.

			Add the beef broth, dry white wine, bay leaf, fresh thyme, salt, and black pepper to the slow cooker.

			Cover and cook on low for 6-8 hours.

			Before serving, preheat the oven to 400°F (200°C).

			Place the baguette slices on a baking sheet and toast in the oven until golden, about 5-7 minutes.

			Ladle the soup into bowls, top each with a toasted baguette slice, and sprinkle with shredded Gruyere cheese.
