Directions
Step 1
Soak the dried red chili peppers in hot water for about 30 minutes until they soften.
Step 2
Drain the peppers and remove the seeds and stems.
Step 3
In a skillet, toast the cumin seeds, coriander seeds, and caraway seeds over medium heat until fragrant.
Step 4
Grind the toasted seeds into a fine powder using a spice grinder or mortar and pestle.
Step 5
In a food processor, combine the softened chili peppers, garlic cloves, ground spices, salt, olive oil, and lemon juice.
Step 6
Blend until you obtain a smooth paste. Add more olive oil if needed to reach the desired consistency.
Step 7
Transfer the harissa paste to a jar and store in the refrigerator for up to a month.
