Ingredients

  • 60 grams all-purpose flour
  • 30 grams butter
  • 3 egg whites
  • 3 egg yolks
  • 80 milliliters lemon juice
  • 1 tablespoon lemon zest
  • 240 milliliters milk
  • 1 pinch salt
  • 200 grams sugar

Directions

Step 1
Preheat your oven to 350°F (175°C).
Step 2
In a medium bowl, whisk together the sugar, flour, and salt.

Add the lemon zest, lemon juice, milk, egg yolks, and melted butter. Whisk until well combined.
Step 4
In a separate bowl, beat the egg whites until stiff peaks form.
Step 5
Gently fold the egg whites into the lemon mixture until just combined.
Step 6
Pour the batter into a lightly greased baking dish.
Step 7
Place the baking dish in a larger pan and fill the larger pan with hot water until it reaches halfway up the sides of the baking dish.
Step 8
Bake for 40-45 minutes, or until the top is golden and the center is set.
