  • 1 bay leaf
  • 4 cups beef broth
  • 1 kg beef stew meat
  • 4 carrots
  • 3 stalks celery
  • 1 cup frozen peas
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 onion
  • 0.5 teaspoon pepper
  • 4 potatoes
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 2 tablespoons tomato paste

Directions

Step 1
Heat the olive oil in a pressure cooker on the sauté setting.
Step 2
Season the beef stew meat with salt and pepper. Add the meat to the cooker and brown on all sides.
Step 3
Add the chopped onion and minced garlic to the pot, and sauté until softened.
Step 4
Stir in the sliced carrots, celery, and potato chunks.
Step 5
Pour in the beef broth and add the tomato paste, dried thyme, and bay leaf. Stir to combine.
Step 6
Close the pressure cooker lid and cook on high pressure for 35 minutes.
Step 7
Release the pressure naturally for 10 minutes, then quick release any remaining pressure.
Step 8
Stir in the frozen peas and let the stew sit for a few minutes before serving.
