These Brazilian Cheese Buns, or Pan de Queso, are a delightful gluten-free snack made with tapioca flour and cheese. Crispy on the outside and chewy on the inside, they are perfect for any time of the day.

  • 2 eggs
  • 240 ml milk
  • 100 g mozzarella cheese
  • 100 g Parmesan cheese
  • 1 tsp salt
  • 250 g tapioca flour
  • 60 ml vegetable oil

Directions

Step 1
Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
Step 2
In a medium saucepan, combine the milk, vegetable oil, and salt. Heat over medium heat until it just comes to a boil.

Remove from heat and add the tapioca flour, stirring until well combined. The mixture will be sticky and gelatinous.

Let the mixture cool slightly, then add the eggs one at a time, mixing well after each addition.

Stir in the grated Parmesan and mozzarella cheeses until the dough is smooth and well combined.
Step 6
Using a spoon or a cookie scoop, drop balls of dough onto the prepared baking sheet.

Bake for 20-25 minutes, or until the buns are puffed and golden brown.
