Step 1
In a bowl, mix together the kosher salt, sugar, and lemon zest.

Place a large piece of plastic wrap on a flat surface. Spread half of the dill on the plastic wrap.

Place the salmon fillet on top of the dill, skin side down.

Rub the salt and sugar mixture evenly over the top of the salmon.

Place the remaining dill on top of the salmon, covering it completely.
Step 6
Wrap the salmon tightly with the plastic wrap. Place it in a shallow dish to catch any liquid that may seep out.
Step 7
Refrigerate the salmon for 48 hours, turning the fish over every 12 hours.
Step 8
After 48 hours, unwrap the salmon and rinse off the salt mixture under cold water. Pat the salmon dry with paper towels.
Step 9
Slice the salmon thinly against the grain and serve.
