					Step 1
			Preheat oven to 450 degrees F (230 degrees C).
					Step 2
			Place chicken on a work surface, breast-side down. Using kitchen shears, cut along both sides of the backbone and remove it. Flip chicken over and press down to flatten it.
					Step 3
			Rub the chicken with olive oil, then season with salt and black pepper. Rub minced garlic, lemon juice, and rosemary all over the chicken.

			Heat a large oven-proof skillet over medium-high heat. Place chicken, skin-side down, in the skillet and place a heavy skillet or a brick wrapped in foil on top of the chicken to weigh it down.

			Cook on the stovetop for about 10 minutes until the skin is golden brown and crispy.

			Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165 degrees F (74 degrees C).
