Ingredients

  • 1 tsp black pepper
  • 6 garlic cloves
  • 3 kg leg of pork
  • 3 tbsp olive oil
  • 2 tbsp rosemary
  • 2 tsp salt
  • 2 tbsp thyme

Directions

Step 1
Preheat your oven to 180°C (350°F).
Step 2
In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, salt, and black pepper to form a paste.

Rub the herb paste all over the leg of pork, ensuring it is evenly coated.
Step 4
Place the pork leg on a roasting rack in a roasting pan.
Step 5
Roast the pork in the preheated oven for about 2.5 hours, or until the internal temperature reaches 70°C (160°F).
Step 6
Once cooked, remove the pork leg from the oven and let it rest for 15 minutes before carving.
Step 7
Carve the pork leg and serve with your favorite sides.
